Our Favorite Cake
with Kabocha Squash
2 c unbleached flour
1/2 teaspoon salt
2 teaspoon baking soda
2 teaspoon cinnamon
1 teaspoon ginger (optional)
2 teaspoon cloves (optional)
4 eggs
2 cups Red Kabocha cooked and pureed
1/2 cup oil
1/2 cup butter (softened)
2 cup sugar
Combine first 6 ingredients (first 4 if ginger and cloves are omitted;can add extra cinnamon if you like). Beat eggs until thick and yellow. Add sugar and beat well. Add Kabocha, oil, and butter; beat well. Gradually stir in flour mixture. Raisins or nuts may be added. Bake 350 degrees approximately 35 to 40 minutes. (Keep watch till golden and toothpick comes out clean.)
